A lot of girls don't have the traditional 'family' structure and the Father/Daughter dance may not happen for the wedding. How do you handle some of the more complex aspects of planning a wedding where there is no Father figure for the first dance?

Skip it. That's all, just skip it. If the bride does not have a father present, or if she has a step-Dad she does not want to dance with, just skip that part of the reception all together.

This is your reception and the newly married couple has every right in the world to craft the ceremony and the day with or without any tradition they choose. So go right ahead and drop the Father / Daughter Dance if it doesn't fit the reality of the bride's family style. Don't worry for a split second about any criticism over your choice here.
